Development of Modified Starches from Cassava (Mahinot esculenta Crantz) through Ultrasonication: Its Potential as a Tablet Binder

Starch, a mixture of amylose and amylopectin, is a commonly used excipient in the production of pharmaceutical tablets. However, in its native form, it poses many functional drawbacks such as low water solubility, fast disintegration, and decline of binding properties over time (due to retrogradation). A common practice to alleviate these shortcomings is to physically or chemically modify its structure. Such modifications comprise treatment using pre-gelatinization, esterification, oxidation, enzyme addition, and recently, the use of ultrasonication.

Cassava (Mahinot esculenta Crantz) is an abundant crop grown in the Philippines that contains around 20% starch. This project aims to investigate the effects of ultrasonication in the modification of cassava starch, in particular, to look into its capabilities as a tablet binder.

The scope of this study includes: developing a process for the ultrasonic modification of cassava starch; conducting physicochemical analyses of the modified starches; and evaluating the suitability of the starches as a tablet binder.
